Rolling Knödel with Regina Gruber

Learn to make a true staple of South Tyrolean cuisine

Some of the best holiday memories come from simple things, rather than grand events – an afternoon spent together, a nice chat, a family recipe handed down through generations. This is what our Knödel-making class is all about: senior host Regina Gruber offers Tratterhof guests an opportunity to discover South Tyrolean cuisine not just by tasting it, but by making it themselves.

Regina will show you how simple ingredients can be transformed into a beloved staple of South Tyrolean cuisine. It won’t be a demonstration; you will have the opportunity to help with the preparation, shaping the dumplings with your own hands and learning more about traditional local recipes.

Hospitality as a way of life

The Knödel-making class is more than just an activity on our programme: it’s an encounter with both the hosts and a culinary tradition that is still part of South Tyrolean identity to this day. Senior host Regina will let you in on her culinary secrets with patience and pleasure, sharing her extensive experience through little tricks that make all the difference as along with tried-and-tested recipes. At the end of the class, you will know why Knödel are so much more to South Tyroleans than just a side dish.

As you have a chat with the host and other participants, and laugh together over wonky-shaped dumplings, the relaxed atmosphere will make you feel at ease – after all, a Knödel experience shared is twice the joy!

Make a South Tyrolean classic with your own hands

Knödel dumplings are the flagship recipe in a cuisine that can conjure up a delectable meal from just a few good ingredients. They are deeply rooted in rural daily life and have been a staple of South Tyrolean cooking since forever. By rolling them with your own hands, you will find out just how much skill goes into achieving the right consistency, and why every family has its own secret tricks when it comes to preparing dumplings.

Regina Gruber is happy to share her secrets with guests, leaving them not just with a tasty traditional dish, but also with that special feeling of accomplishment that comes from creating something with your own hands.

Getting to know your hosts

Tratterhof Mountain Sky Hotel is a family-run establishment where human connection is an essential part of the experience.

The Knödel-making class is the perfect example: guests have an opportunity to get to know Regina Gruber not just as their host, but as a person who upholds and shares the traditions of where she comes from. It’s this personal dimension of hospitality that makes every stay truly memorable.

An experience for fine palates and curious minds

Anyone can have a go: no cooking experience required! All you need to bring is curiosity, a love of experimenting in good company and a taste for authentic South Tyrolean cuisine. This experience is offered exclusively to guests staying at Tratterhof Mountain Sky Hotel, and is held in the buffet area of the panoramic restaurant for groups of 3 to 30 people. Registration is required.

If you love the idea of not just seeing, but also tasting South Tyrol and gaining deeper insights into its traditions, this class will give you the perfect opportunity. You can look forward to a personal, authentic experience with no fuss and a real human touch… and a recipe you can take home!
